  • 2 cloves garlic
  • 1 inch ginger
  • 28 oz crushed tomatoes
  • 13.5 oz full-fat coconut milk
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Assorted spices (garam masala, curry powder, paprika, etc.)
  • Fresh cilantro (for garnish)

  1. Sauté chopped onion in butter until softened.
  2. Add minced garlic and grated ginger; cook until fragrant.
  3. Brown cubed chicken in the skillet.
  4. Stir in tomato paste and spices; cook briefly to bloom flavors.
  5. Combine with crushed tomatoes and chicken broth; transfer to crockpot.
  6. Stir in coconut milk and slow cook on low for 6-8 hours or high for 3-4 hours.
  7. About 30 minutes before serving, stir in heavy cream and lemon juice.
  8. Garnish with fresh cilantro before serving over basmati rice with naan.
