  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 oz, undrained)
  • 1 cup frozen peas
  • 1 cup frozen corn
  • Dried thyme and rosemary
  • Salt and pepper to taste

  1. Pat the beef cubes dry and season with salt and pepper.
  2. Brown the meat in olive oil in a skillet over medium-high heat; set aside.
  3. Sauté onions, carrots, and celery in the same skillet until softened.
  4. Add garlic and tomato paste; cook for one minute.
  5. Sprinkle flour over vegetables, stirring to create a roux.
  6. Gradually whisk in beef broth until smooth.
  7. Combine all ingredients in the slow cooker, including browned beef, diced tomatoes, herbs, and seasonings.
  8. Cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  9. Stir in frozen peas and corn about half an hour before serving.
