  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup frozen peas
  • 1 cup frozen corn
  • Dried herbs: thyme and rosemary

  1. Pat beef cubes dry; season with salt and pepper.
  2. In a skillet over medium-high heat, brown beef cubes in olive oil.
  3. Remove beef; sauté onion, carrots, and celery for about 5 minutes.
  4. Add garlic and tomato paste; cook for an additional minute.
  5. Stir in flour for a roux; gradually whisk in beef broth until smooth.
  6. Combine all ingredients in the slow cooker: add browned beef back along with diced tomatoes and herbs.
  7. Slow cook on low for 6–8 hours or high for 3–4 hours.
  8. Stir in frozen peas and corn during the last half hour of cooking.
