  • 3 tablespoons extra virgin olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary (finely crushed)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

  1. Scrub baby potatoes clean and cut larger ones in half or quarters. Boil in salted water for 8–10 minutes until fork-tender. Drain and let steam dry.
  2. In a shallow bowl, mix Parmesan cheese, garlic powder, onion powder, oregano, thyme, rosemary, salt, pepper, and optional spices.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Toss par-boiled potatoes with olive oil until coated.
  4. Add the Parmesan mixture and toss to coat evenly.
  5. Spread potatoes on the baking sheet in a single layer and bake for 20–25 minutes until golden brown. Flip halfway through for even crispiness.
  6. Optional: Broil for an additional minute for extra crunch.
  7. Let cool slightly before serving; garnish with chopped parsley.
