  • 2 tbsp extra virgin olive oil
  • 2 tbsp honey
  • 1 tsp dried thyme
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ½ cup dried cranberries
  • ¼ cup crumbled feta cheese
  • ¼ cup raw pumpkin seeds

  3. Peel and cube the butternut squash into uniform pieces (¾ inch).
  4. In a large bowl, combine olive oil, honey, thyme, garlic powder, smoked paprika, sea salt, and black pepper.
  5. Toss the cubed squash in the seasoning mixture until well coated.
  6. Spread the squash on lined baking sheets in a single layer.
  7. Roast for about 15 minutes; flip pieces and roast for another 15–20 minutes until tender and caramelized.
  8. Sprinkle cranberries and pumpkin seeds over roasted squash; gently mix.
  9. Top with crumbled feta cheese and serve warm.
