  • 1 tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 10 oz can diced tomatoes and green chilies
  • 4 oz can chopped green chilies
  • Spices: chili powder, cumin, smoked paprika, cayenne pepper, salt, black pepper
  • ¼ cup beef broth
  • 12 corn tortillas
  • Vegetable oil for frying
  • Shredded Monterey Jack cheese

  1. In a skillet, heat olive oil over medium-high heat. Add flank steak and cook until browned (5-7 minutes). Set aside.
  2. Sauté chopped onion for about 5 minutes; then add garlic and cook for an additional minute.
  3. Stir in diced tomatoes, green chilies, spices, and beef broth. Simmer for 5 minutes.
  4. Return beef to the skillet; cover and simmer for 15-30 minutes.
  5. Cool slightly before filling warm tortillas with beef mixture and cheese; roll tightly.
  6. Heat vegetable oil in a skillet to 350°F (175°C) and fry taquitos until golden brown (2-3 minutes per side).
  7. Drain excess oil on paper towels and serve immediately.
