  1. In a large skillet, heat olive oil over medium-high heat. Cook thinly sliced flank steak until browned (5–7 minutes). Remove and set aside.
  2. Sauté chopped onion for 5 minutes, then add minced garlic for another minute.
  3. Stir in diced tomatoes, green chilies, chili powder, cumin, smoked paprika, salt, and pepper; cook for 5 minutes.
  4. Add the cooked beef back to the skillet with beef broth, cover, and simmer on low for 15–30 minutes.
  5. Warm corn tortillas until pliable. Fill each with 2–3 tablespoons of beef mixture and cheese; roll tightly.
  6. Fry in hot vegetable oil at 350°F (175°C) until golden brown (2–3 minutes per side).
  7. Drain excess oil and serve immediately with toppings like sour cream, salsa, or lime wedges.
