Inspect salmon fillet for bones, then cut into 1-inch cubes.
In a bowl, toss salmon with cornstarch, garlic powder, onion powder, salt, and black pepper until evenly coated.
In another shallow dish, combine panko breadcrumbs with cornstarch, salt, and pepper.
Press each salmon cube into the breadcrumb mixture for extra crunch.
Heat olive oil in a skillet over medium-high heat and fry salmon cubes for about 2-3 minutes on each side until golden brown.
In a separate bowl, mix mayonnaise, sweet chili sauce, sriracha, rice vinegar, honey, and garlic powder to make the Bang Bang sauce.
Toss cooked salmon bites in the sauce until well coated.
Serve garnished with chopped green onions and sesame seeds.
