  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup Gruyere cheese
  • 1/2 cup Parmesan cheese

  1. Preheat your oven to 350°F (175°C).
  2. Peel and thinly slice Yukon Gold potatoes, keeping sliced potatoes in cold water to prevent browning.
  3. Thinly slice the onion and mince the garlic.
  4. In a saucepan, melt butter over medium heat; whisk in flour for about 2-3 minutes.
  5. Gradually add milk while whisking continuously until smooth; then mix in heavy cream.
  6. Season with salt, pepper, and nutmeg; simmer until slightly thickened.
  7. Stir in Gruyere and Parmesan until melted.
  8. Grease a baking dish; layer potatoes, onions, and cream sauce three times finishing with sauce on top.
  9. Sprinkle reserved cheese; cover with foil and bake for one hour.
  10. Remove foil and bake for an additional 30-45 minutes until golden brown.
  11. Let rest for at least 15 minutes before serving.
