  • 1 large head of garlic
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth (or chicken broth)
  • 2 cups Yukon Gold potatoes, peeled and cubed
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 cup heavy cream or half-and-half
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Cut off the top of the garlic head and drizzle with olive oil. Wrap in foil and roast for about 30 minutes until soft.
  2. In a pot, heat remaining olive oil over medium heat. Sauté onion, carrots, and celery for 5-7 minutes until softened.
  3. Add cubed potatoes and sauté for an additional 2-3 minutes.
  4. Stir in thyme, rosemary, salt, and pepper. Pour in broth and add roasted garlic cloves (discard skins).
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  6. Blend soup until smooth using an immersion blender or regular blender.
  7. Return soup to pot; stir in cream and heat through gently without boiling.
  8. Taste and adjust seasonings as necessary before serving.
