  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth (or chicken broth)
  • 2 cups Yukon Gold potatoes, peeled and cubed
  • 1 cup heavy cream (or half-and-half)
  • Fresh parsley, chopped (for garnish)

  1. Preheat your oven to 400°F (200°C) and roast the garlic wrapped in foil with olive oil for about 45-60 minutes until soft.
  2. In a large pot, sauté onion, carrots, and celery in olive oil until softened (5-7 minutes).
  3. Add cubed potatoes and sauté for another couple of minutes.
  4. Stir in thyme, rosemary, red pepper flakes (if desired), salt, and pepper.
  5. Pour in broth and add roasted garlic cloves; bring to a boil then simmer for 15-20 minutes until potatoes are tender.
  6. Blend the soup until smooth; return to pot and stir in heavy cream.
  7. Heat through gently without boiling. Adjust seasoning as needed.
  8. Garnish with fresh parsley and serve hot.
