  • 2 pounds baby potatoes, halved
  • 2 tablespoons olive oil or butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken or vegetable broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme or Italian seasoning
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Wash and halve baby potatoes.
  2. Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
  3. Roast for 25-35 minutes until fork-tender, flipping halfway through.
  4. In a skillet over medium-low heat, sauté minced garlic (and onion if using) in olive oil for 1-2 minutes until fragrant.
  5. Deglaze with broth, simmering for 2-3 minutes.
  6. Stir in heavy cream, seasonings, and bring to a gentle simmer until thickened.
  7. Mix in Parmesan cheese until melted. Combine roasted potatoes with the sauce and garnish with parsley before serving.
