  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 (1-pound) package refrigerated gnocchi
  • 1/4 cup chopped sun-dried tomatoes
  • 1/2 cup grated Parmesan cheese

  1. In a bowl, toss cubed chicken with olive oil, salt, pepper, garlic powder, and onion powder.
  2. Dredge seasoned chicken in flour; shake off excess.
  3. Cook in a skillet over medium-high heat until browned (6-8 minutes). Remove and set aside.
  4. In the same skillet, melt butter and sauté sun-dried tomatoes for about a minute.
  5. Pour in chicken broth; scrape up browned bits and simmer.
  6. Stir in cream and simmer until thickened (about 5 minutes).
  7. Mix in Parmesan cheese before adding cooked gnocchi to the sauce.
  8. Return cooked chicken to the skillet; stir well to combine.
  9. Serve immediately and enjoy!
