  • 1.5 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1 tbsp olive oil
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 (4 oz) can diced green chilies (undrained)
  • 1 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • Spices: chili powder, cumin, cayenne pepper (optional), salt, and pepper

  1. Season cubed chicken with salt, pepper, chili powder, cumin, and cayenne.
  2. In a skillet over medium-high heat, heat olive oil and brown the chicken for about 8–10 minutes.
  3. Add chopped onion to the skillet and sauté for about five minutes until softened.
  4. Stir in minced garlic for one minute until fragrant.
  5. Combine the cream of mushroom soup and diced green chilies; bring to a gentle simmer.
  6. Lower the heat and mix in sour cream until heated through.
  7. Taste and adjust seasoning as needed.
  8. Stir in cooked chicken and half of each cheese type until combined.
  9. Fold in chopped cilantro for freshness.
  10. Preheat oven to 350°F (175°C).
  11. Transfer mixture to a greased baking dish; top with remaining cheese.
  12. Bake for 20–25 minutes until hot and bubbly.
  13. Let rest for five minutes before serving.
