  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.75 ounce) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • 1 cup crushed Ritz crackers
  • 1/4 cup melted butter
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn

  1. Preheat your oven to 375°F (190°C). Cut the chicken into bite-sized pieces.
  2. In a skillet, heat olive oil over medium-high heat. Cook the chicken until browned on all sides (6-8 minutes), then set aside.
  3. Sauté onions in the same skillet until softened (about 5 minutes). Add minced garlic and cook for an additional minute.
  4. Stir in cream of mushroom soup, milk, sour cream, thyme, salt, and pepper until smooth.
  5. Combine cooked chicken with peas and corn in the sauce mixture.
  6. Pour into a greased baking dish and spread evenly.
  7. Mix crushed Ritz crackers with melted butter and sprinkle over the casserole along with shredded cheese.
  8. Bake for 20-25 minutes until golden and bubbly.
