  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 pound boneless, skinless chicken breasts, cubed
  • Spices: smoked paprika, cayenne pepper, garlic powder, onion powder, oregano
  • 14.5 oz can diced tomatoes (undrained)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • Optional: fresh cilantro and grated Parmesan cheese for garnish

  1. Toss chicken cubes with smoked paprika, cayenne pepper, garlic powder, onion powder, oregano, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat; cook seasoned chicken until browned (6-8 minutes). Remove and set aside.
  3. In the same skillet, sauté onions and bell peppers until softened (5-7 minutes). Add minced garlic and cook for an additional minute.
  4. Stir in diced tomatoes with juice, chicken broth, and heavy cream; simmer for about 10 minutes. Add butter until melted.
  5. Return cooked chicken to the sauce; adjust seasoning if needed.
  6. Cook linguine according to package instructions; drain.
  7. Combine linguine with the sauce in the skillet; toss gently to coat.
  8. Stir in fresh cilantro and grated Parmesan before serving.
