  1. Start by peeling and dicing the potatoes, then soak them in cold water. Wash and cut broccoli into florets. Dice onion and mince garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onion for 5–7 minutes until translucent, then add garlic for one more minute.
  3. Drain potatoes and add to the pot along with broth, salt, pepper, and paprika. Bring to a gentle simmer for 10–12 minutes until potatoes are tender.
  4. Stir in broccoli and simmer uncovered for 5–7 minutes until tender-crisp. Add milk gently.
  5. Lower heat and gradually stir in cheese until melted and smooth. Optionally mash some potatoes for a creamier texture.
  6. Taste and adjust seasoning before serving in bowls garnished with green onions or chives.
