  • For frosting: 1 cup unsalted butter, 4 cups powdered sugar, ½ cup cream cheese, additional lime juice and zest.

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar in a large bowl until light and fluffy.
  4. Add eggs one at a time; mix in vanilla extract.
  5. Gradually combine dry ingredients with the creamed mixture alternating with coconut milk.
  6. Fold in lime juice and zest gently until combined.
  7. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool completely before frosting.
