  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, thinly sliced
  • 13.5 oz can full-fat coconut milk
  • 4 cups vegetable broth
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon lime juice

  1. Prepare the dumplings by mixing flour and salt in a bowl. Stir in coconut and cilantro. Slowly add vegetable broth until dough forms. Knead until smooth and elastic, then shape into small balls.
  2. In a large pot, heat coconut oil over medium heat. Sauté onion until soft, then add garlic and ginger. Cook until fragrant before adding bell pepper.
  3. Pour in coconut milk and vegetable broth; mix well. Add red curry paste, soy sauce, lime juice, brown sugar, turmeric, and optional red pepper flakes.
  4. Bring the broth to a simmer for about 15 minutes. Adjust seasoning as needed.
  5. Drop the dumplings into the simmering broth and cook for 8-10 minutes until they float.
  6. Serve hot with garnishes like cilantro, lime wedges, toasted sesame seeds, and sriracha.
