  • 2 cloves garlic, minced
  • 1 (13.5 ounce) can full-fat coconut milk
  • 4 cups vegetable broth
  • 2 tablespoons red curry paste

  1. In a medium bowl, whisk together flour and salt. Mix in shredded coconut and cilantro.
  2. Gradually add vegetable broth until a shaggy dough forms. Knead for 2–3 minutes until smooth.
  3. In a large pot, heat coconut oil over medium heat, then sauté onions until softened (5–7 minutes).
  4. Add garlic and ginger; cook for another minute until fragrant.
  5. Stir in sliced bell pepper and cook for 3–5 minutes.
  6. Pour in coconut milk and vegetable broth; mix well.
  7. Add red curry paste, soy sauce, lime juice, brown sugar, turmeric powder, and optional red pepper flakes; stir to combine.
  8. Simmer the broth for at least 15 minutes.
  9. Drop dumplings into the simmering broth; cook for 8–10 minutes until they float.
  10. Serve hot with garnishes like fresh cilantro, lime wedges, toasted sesame seeds, and green onions.
