  • 1.75 cups granulated sugar
  • 3 large eggs
  • 0.75 cup buttermilk (or milk + lemon juice/vinegar)
  • 0.5 cup apple cider reduction
  • Ground cinnamon
  • Cream cheese (for frosting)

  1. Prepare apple cider reduction by simmering non-alcoholic apple cider until thickened.
  2. Preheat oven to 350°F (175°C) and line muffin tins with paper liners.
  3. Whisk together flour, baking powder, baking soda, salt, and cinnamon in a bowl.
  4. Cream softened butter and sugar until light and fluffy; add eggs one at a time and mix in vanilla.
  5. Alternate adding dry ingredients and buttermilk to the mixture until just combined.
  6. Fold in cooled apple cider reduction.
  7. Fill muffin tins two-thirds full and bake for 18-22 minutes or until a toothpick comes out clean.
  8. Let cool before frosting with cream cheese mixture.
