  • 1 large onion
  • 2 cloves garlic
  • 3 bell peppers (red, green, yellow)
  • 1 zucchini
  • 1 yellow squash
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 can diced tomatoes
  • 1 can chickpeas
  • Instructions for Preparation:

  1. Pat chicken cubes dry and season with salt, pepper, paprika, garlic powder, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high heat; cook chicken until browned (5-7 minutes). Remove and set aside.
  3. In the same skillet, sauté onions for 3-5 minutes; add garlic for an additional minute.
  4. Incorporate bell peppers and carrots; cook until slightly softened. Add zucchini, yellow squash, and broccoli.
  5. Stir in diced tomatoes and chickpeas; season with salt and optional red pepper flakes.
  6. Return chicken to skillet; cover and simmer on low for 5-10 minutes until flavors meld.
  7. Serve hot with a garnish of fresh parsley.
