  • 1.5 lbs boneless, skinless chicken breasts
  • 1 large onion
  • 2 cloves garlic
  • 3 bell peppers (red, green, yellow)
  • 1 zucchini
  • 1 yellow squash
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 can diced tomatoes (14.5 oz)
  • 1 can chickpeas (15 oz)
  • Olive oil

  1. Pat chicken cubes dry and season with salt, pepper, paprika, garlic powder, and Italian seasoning.
  2. Chop all vegetables into bite-sized pieces and mince garlic.
  3. Heat olive oil in a skillet over medium-high heat; cook chicken until browned (about 5-7 minutes). Remove chicken from the skillet.
  4. In the same skillet, sauté onion for 3-5 minutes then add garlic for 1 minute.
  5. Add bell peppers and carrots; cook until softened before adding zucchini, yellow squash, and broccoli.
  6. Stir in diced tomatoes (with juice) and chickpeas; season to taste.
  7. Return chicken to the skillet; cover and simmer for about 5-10 minutes until vegetables are tender.
