  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • Spices: oregano, basil, paprika, cayenne pepper, salt, black pepper

  1. Cut chicken into cubes and chop the onion, garlic, and bell peppers.
  2. Heat olive oil in a large skillet over medium-high heat; brown the chicken for about 5-7 minutes.
  3. Remove chicken; sauté onion for 3-5 minutes, add garlic for another minute.
  4. Add bell peppers; season with salt and pepper.
  5. Stir in tomatoes, rice, broth, and spices; bring to a boil.
  6. Reduce heat to low; cover and simmer for 15-20 minutes until rice is cooked.
  7. Mix in the cooked chicken; let sit covered for a few minutes before serving.
