  • 1.5 lbs boneless, skinless chicken breasts (cut into cubes)
  • 1 tbsp olive oil
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 can diced tomatoes (14.5 oz, undrained)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • Various seasonings (oregano, basil, paprika, cayenne pepper)

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and cook until browned (about 5-7 minutes). Remove chicken from skillet and set aside.
  2. In the same skillet, sauté chopped onion for 3-5 minutes until softened. Add minced garlic and cook for another minute.
  3. Stir in chopped bell peppers and cook briefly until slightly tender.
  4. Add diced tomatoes, rice, chicken broth, oregano, basil, paprika, cayenne pepper (if using), salt, and black pepper. Bring to a boil.
  5. Reduce heat to low, cover tightly, and simmer for 15-20 minutes without lifting the lid.
  6. Stir in cooked chicken until well combined and garnish with fresh cilantro before serving with lime wedges.
