  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 (1 ounce) packet taco seasoning
  • 1 teaspoon chili powder
  • 8 ounces elbow macaroni
  • 4 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned.
  3. Stir in chopped onion and minced garlic; sauté until softened.
  4. Mix in diced tomatoes, tomato sauce, taco seasoning, chili powder, and season with salt and pepper. Simmer for 15 minutes.
  5. Meanwhile, cook elbow macaroni according to package instructions until al dente; drain.
  6. Combine cooked macaroni with the meat sauce and mix well.
  7. Transfer to a greased baking dish and top with cheddar and Monterey Jack cheeses.
  8. Bake for 20-25 minutes until bubbly and golden brown.
