  • 1 teaspoon dried rosemary
  • 6 cups chicken or vegetable broth
  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • Fresh chives and parsley for garnish

  1. In a large pot over medium heat, sauté the chopped onion in olive oil until softened (5-7 minutes). Add minced garlic and cook until fragrant.
  2. Stir in dried thyme, rosemary, and red pepper flakes (if using).
  3. Pour in the chicken or vegetable broth and add cubed potatoes. Bring to a boil, then reduce to a simmer until potatoes are tender (15-20 minutes).
  4. Blend the soup with an immersion blender until smooth or in batches using a regular blender.
  5. Return to low heat and stir in heavy cream and cheddar cheese until melted. Season with salt and pepper.
  6. Garnish with fresh chives and parsley before serving.
