  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, sugar, and cinnamon. Press into a greased springform pan.
  2. Bake the crust for 8-10 minutes until golden brown.
  3. In a large bowl, beat cream cheese until smooth. Gradually add sugar; mix well. Add eggs one at a time along with vanilla and spices.
  4. Cook apples in a skillet with butter until slightly softened; stir in sugar until caramelized.
  5. Pour cheesecake filling over crust and top with apple mixture. Bake at 325°F (160°C) in a water bath for about 60-75 minutes or until set but jiggly in center.
  6. Cool gradually in the oven then refrigerate overnight.
  7. For the drizzle, combine heavy cream, sugar, and butter in a saucepan and simmer until golden.
