  1. Preheat oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, melted butter, sugar, and cinnamon. Press into a greased 9-inch springform pan and pre-bake for 8–10 minutes until golden.
  2. Cool the crust completely. In a large bowl, beat cream cheese until smooth, then gradually add sugar. Mix in eggs one at a time, followed by sour cream and spices until just combined.
  3. Pour the cheesecake filling over the cooled crust. Bake in a water bath at 325°F (160°C) for about 60–75 minutes.
  4. For the topping, cook diced apples with butter until tender; add sugar and cook until caramelized. Stir in heavy cream then cool before adding to cheesecake.
  5. Allow cheesecake to cool in the oven for an hour before refrigerating overnight.
  6. Prepare caramel drizzle by combining cream, sugar, and butter over medium heat until thickened; cool slightly before drizzling over chilled cheesecake.
