In a medium saucepan, combine diced apple with optional apple cider, brown sugar, and cinnamon. Cook over medium heat for 8–10 minutes until apples are tender.
Remove from heat and let the mixture cool completely.
In a large bowl, beat together softened cream cheese and butter until smooth.
Gradually add granulated sugar and continue mixing until fluffy.
Stir in vanilla extract and salt until combined.
Gently fold in the cooled apple mixture followed by caramel topping.
If using nuts, fold them in as well.
Transfer to a serving bowl and chill in the refrigerator for at least two hours before serving.
