  • 1 green bell pepper
  • 1 red bell pepper
  • 14.5 ounces diced tomatoes
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 pound pasta (penne or rotini)
  • Cajun seasoning, salt, pepper, fresh parsley

  1. Toss chicken with olive oil, Cajun seasoning, salt, and pepper in a bowl.
  2. Heat skillet over medium-high heat; cook chicken until browned (6-8 minutes).
  3. In the same skillet, sauté onion until softened (3-5 minutes).
  4. Add garlic and bell peppers; cook until slightly tender (3-5 minutes).
  5. Stir in diced tomatoes and chicken broth; simmer for 10 minutes.
  6. Mix in heavy cream and parsley; simmer until slightly thickened (2-3 minutes).
  7. Cook pasta according to package directions; reserve half a cup of pasta water before draining.
  8. Combine cooked chicken with the sauce; add pasta and toss to coat. Adjust consistency with reserved pasta water if needed.
  9. Serve hot; garnish with grated Parmesan cheese if desired.
