  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 pound pasta (penne or rotini)

  1. In a bowl, toss chicken cubes with olive oil, Cajun seasoning, salt, and pepper until evenly coated.
  2. In a large skillet over medium-high heat, cook the chicken until browned (6-8 minutes).
  3. Add chopped onions; cook until softened (3-5 minutes). Then add garlic and bell peppers; cook until tender-crisp (3-5 minutes).
  4. Pour in undrained diced tomatoes and chicken broth; bring to a simmer and cook for about 10 minutes.
  5. Stir in heavy cream and parsley; let simmer until slightly thickened (2 minutes).
  6. Cook pasta according to package directions; reserve ½ cup of pasta water before draining.
  7. Combine cooked chicken and drained pasta in the sauce; adjust consistency with reserved pasta water if needed.
  8. Serve hot, garnished with optional Parmesan cheese and parsley.
