  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 celery stalks
  • 2 cloves garlic
  • 1 tbsp Cajun seasoning
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup chicken broth
  • 1 cup orzo pasta
  • Fresh parsley and green onions for garnish

  1. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken cubes and brown for about 5–7 minutes. Remove chicken once done.
  2. In the same skillet, sauté chopped onion, bell peppers, and celery until softened (about 5–7 minutes). Add minced garlic and spices; cook until fragrant.
  3. Return the chicken to the skillet along with diced tomatoes, chicken broth, and orzo pasta. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 15–20 minutes until orzo is cooked through.
  5. Stir in fresh parsley before serving and garnish with green onions.
