  • 1 tbsp olive oil
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 celery stalks
  • 2 cloves garlic
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 cup orzo pasta
  • Fresh parsley and green onions for garnish

  1. Pat chicken dry and season with salt.
  2. Chop onion, bell peppers, celery, and mince garlic.
  3. In a skillet over medium-high heat, heat olive oil and brown the chicken; set aside.
  4. Sauté onion, bell peppers, and celery until softened.
  5. Add garlic and spices; cook until fragrant.
  6. Return chicken to the pan; add tomatoes, broth, and orzo.
  7. Bring to a boil; then cover and simmer for 15-20 minutes until orzo is cooked.
  8. Stir in fresh parsley before serving.
