  • 500g Chicken breast, diced
  • 300g Broccoli, small florets
  • 200g Cream cheese
  • 150g Shredded mozzarella
  • ½ cup Chicken broth (low sodium)
  • Olive oil or butter
  • Garlic powder, onion powder, salt, pepper
  • Optional: Mustard, dried thyme or Italian herbs

  1. Preheat oven to 190°C (375°F) and lightly grease a 9×13 inch baking dish.
  2. Blanch broccoli in salted boiling water for 2-3 minutes; transfer to an ice bath.
  3. Season chicken with garlic powder, onion powder, salt, and pepper; cook in skillet with olive oil until browned.
  4. In the same skillet, melt cream cheese with chicken broth and seasonings until smooth; stir in half the mozzarella.
  5. Layer blanched broccoli in the baking dish followed by chicken; pour sauce over top and sprinkle remaining mozzarella.
  6. Bake for 25-35 minutes until bubbly and golden.
