  • 500g Chicken breast, diced
  • 300g Broccoli, small florets
  • 200g Cream cheese
  • 150g Shredded mozzarella
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • Salt and pepper to taste
  • 1 tsp Olive oil or butter
  • ½ cup Chicken broth (low sodium)
  • 1 tsp Mustard (optional)
  • 1 tsp Dried thyme or Italian herbs

Instructions

  1. Preheat your oven to 190°C (375°F) and lightly grease a baking dish.
  2. Blanch broccoli in boiling salted water for 2-3 minutes; then transfer to an ice bath.
  3. Season diced chicken with garlic powder, onion powder, salt, and pepper. Cook in olive oil or butter over medium-high heat until lightly browned.
  4. In the same skillet, combine cream cheese and chicken broth; stir in half of the mozzarella until smooth.
  5. Spread blanched broccoli in the baking dish, layer with cooked chicken, pour sauce over everything, and top with remaining mozzarella.
  6. Bake for 25-35 minutes until bubbly and golden brown.
