  • 2 pounds of Potatoes (Yukon Gold or Russet)
  • 1 large Yellow Onion
  • 4 cloves of Garlic
  • 6 cups of Vegetable Broth
  • 1 cup Heavy Cream
  • 2 cups Sharp Cheddar Cheese (shredded)
  • 4 tablespoons Butter
  • 3 tablespoons All-Purpose Flour
  • Salt and Pepper (to taste)

Instructions

  1. In a large pot, melt butter over medium heat. Sauté the chopped onion until softened.
  2. Add minced garlic and cook for another minute.
  3. Sprinkle flour into the mixture, cooking for 1–2 minutes to create a roux.
  4. Gradually whisk in vegetable broth until smooth.
  5. Add cubed potatoes and simmer covered until tender (15–20 minutes).
  6. Stir in broccoli florets and cook until tender-crisp (5–7 minutes).
  7. Blend the soup until creamy, then return it to the pot.
  8. Stir in heavy cream and shredded cheddar over low heat until melted.
  9. Season with salt, pepper, and nutmeg if desired.
  10. Serve hot with toppings of your choice.
