  • 2 lbs beef short ribs
  • 68 cloves garlic
  • 45 dried guajillo chiles
  • 23 dried ancho chiles
  • 1 (14.5 oz) can diced tomatoes
  • 8 cups beef broth
  • Corn tortillas
  • Oaxaca cheese, shredded
  • Fresh cilantro and onion, for garnish
  • Preparation Instructions:

Instructions

  1. Toast the dried chiles in a skillet until fragrant, then soak them in hot water for 30 minutes.
  2. Blend soaked chiles with diced tomatoes, garlic, and spices until smooth.
  3. Sear seasoned beef chunks in olive oil until browned.
  4. Sauté onions and garlic in the same pot, then add the chile mixture and broth.
  5. Simmer on low heat for 3-4 hours until tender; shred the beef.
  6. Dip corn tortillas into consommé, fill with cheese and shredded beef, fold, and cook until crispy.
  7. Serve hot with garnishes and additional consommé for dipping.
