  • 34 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 large onion
  • 6 cloves garlic
  • 4 cups beef broth
  • Corn tortillas
  • Oaxaca cheese (or Monterey Jack)
  • Chopped cilantro and white onion

  1. Toast dried chiles in a dry skillet over medium heat for 2-3 minutes per side, then soak in hot water for 30 minutes.
  2. Heat olive oil in a skillet; sauté chopped onion until softened. Add garlic, tomatoes, and ginger.
  3. Blend soaked chiles with sautéed mixture and seasonings until smooth.
  4. Season beef with salt and pepper; optionally sear in the skillet. Place beef in slow cooker with blended sauce and broth.
  5. Cook on low for 8-10 hours or high for 4-6 hours until tender.
  6. Shred beef, skim fat from consommé, then assemble tacos using dipped tortillas filled with cheese and beef.
  7. Cook on a skillet until crispy; serve immediately with garnishes.
