  • Optional: 1/4 teaspoon sugar, pinch of cayenne pepper

  1. Squeeze the canned tomatoes gently to break them up while keeping the juice intact.
  2. Remove the stems and seeds from the jalapeños for milder salsa; wash hands afterward.
  3. Roughly chop the white onion and peel the garlic cloves.
  4. Pack cilantro into a measuring cup and juice one lime.
  5. Combine all ingredients in a blender or food processor: tomatoes (with juice), jalapeños, onion, garlic, cilantro, lime juice, cumin, salt, sugar (if using), and cayenne pepper (if desired).
  6. Pulse until larger pieces are broken down but not fully smooth.
  7. Blend to your desired consistency—smooth or chunky.
  8. Taste and adjust seasoning as needed before transferring to an airtight container.
  9. Chill in the refrigerator for at least 30 minutes before serving.
