  1. Open the can of whole peeled tomatoes and gently squeeze them.
  2. Stem and seed the jalapeños based on your desired spice level.
  3. Roughly chop the onion and peel the garlic.
  4. Pack fresh cilantro into a measuring cup.
  5. Juice the lime over the mixture.
  6. In a blender or food processor, combine all ingredients: tomatoes with juice, jalapeños, onion, garlic, cilantro, lime juice, cumin, salt, sugar (if using), and cayenne pepper (if using).
  7. Pulse briefly before blending until you reach your desired consistency—smooth or chunky.
  8. Taste and adjust seasoning as needed.
  9. Transfer to an airtight container and chill in the fridge for at least 30 minutes before serving.
