  • 3 large ripe to overripe bananas
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon non-alcoholic vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional add-ins (up to 1 cup): chopped nuts, chocolate chips, dried fruit

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, mash the bananas until mostly smooth. Add melted butter, eggs, sugars, and vanilla extract; mix well until combined.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually fold the dry mixture into the wet ingredients until just combined; avoid overmixing.
  4. If using add-ins, fold them in gently.
  5. Pour batter into prepared pan and bake for 55-65 minutes or until a toothpick inserted comes out clean.
  6. Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely before slicing.
