  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 12 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

  1. Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned.
  2. Stir in chopped onion and green bell pepper; sauté until softened.
  3. Add diced tomatoes (with juices), tomato sauce, taco seasoning, chili powder, cumin, and cayenne pepper. Season with salt and pepper to taste.
  4. Simmer the mixture for 15-20 minutes until thickened.
  5. Warm tortillas and prepare cheeses and any desired toppings.
  6. Assemble burritos by spooning filling and cheese into each tortilla; roll tightly.
  7. Cook burritos in the skillet until golden brown on both sides or bake at 375°F for about 20-25 minutes.
