  • 2 tablespoons Olive Oil
  • 1 large Onion, finely chopped
  • 8 oz Cremini Mushrooms, sliced
  • 2 cloves Garlic, minced
  • 1 cup Beef Broth
  • 1/2 cup Sour Cream
  • 2 tablespoons Dijon Mustard
  • 1 tablespoon Worcestershire Sauce
  • Salt and Pepper to taste
  • 1 lb Egg Noodles

Instructions

  1. Pat beef dry; season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat; sear beef until browned (1-2 minutes per side). Remove and set aside.
  3. In the same skillet, sauté onion until translucent (5-7 minutes), then add mushrooms and cook until browned (8-10 minutes).
  4. Stir in garlic; cook for another minute.
  5. Add beef broth and Worcestershire sauce; simmer for 10 minutes to thicken.
  6. Meanwhile, cook egg noodles according to package instructions.
  7. Return beef to skillet; stir in tempered sour cream and mustard off heat. Adjust seasoning.
  8. Serve over noodles, garnished with parsley.
