  • 1.5 lbs Beef Chuck, cut into 1-inch cubes
  • 2 tbsp Olive Oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 8 oz Cremini Mushrooms, sliced
  • 1 cup Beef Broth
  • 1/2 cup Apple Vinegar (optional)
  • 2 tbsp All-Purpose Flour
  • 1 tbsp Tomato Paste
  • Spices: Dried Thyme, Dried Rosemary, Bay Leaf, Salt, Black Pepper
  • For the Crust: 2 1/2 cups All-Purpose Flour, Salt, Cold Unsalted Butter, Ice Water, Beaten Egg (for wash)
  • Preparation Instructions:

  1. Sear the seasoned beef cubes in olive oil until browned. Remove from pot.
  2. Cook onions and garlic until softened; add mushrooms and cook until browned.
  3. Stir in tomato paste and spices; then sprinkle flour over mixture.
  4. Gradually add beef broth (and apple vinegar if using) while scraping up browned bits.
  5. Return beef to pot; simmer covered for 2–3 hours until tender.
  6. Prepare crust by mixing flour and salt; cut in cold butter until crumbly. Add ice water gradually to form dough.
  7. Chill dough before rolling it out into a circle larger than your pie dish.
  8. Assemble the pie with cooled filling; top with crust and bake until golden brown.
