  • 2 cups cooked and cooled long-grain rice
  • 1 cup diced chicken (or turkey)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed frozen vegetables (peas, carrots, corn)
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 teaspoon sesame oil
  • Optional: Sriracha or chili garlic sauce for heat

  1. In a large skillet or wok over medium heat, cook the diced chicken until golden brown and cooked through. Remove and set aside.
  2. In the same pan, sauté chopped onion in remaining oil until translucent. Add garlic and stir for one minute until fragrant.
  3. Stir in mixed frozen vegetables and cook until heated through.
  4. Push the veggie mixture to one side of the skillet; pour beaten eggs into the empty space and scramble until just set.
  5. Combine everything in the skillet, then add the cooked rice and soy sauce. Stir well to combine all ingredients.
  6. Drizzle with sesame oil and stir-fry for another few minutes until heated through.
  7. Add back in the cooked chicken; mix well and serve hot.
