  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed frozen vegetables (peas, carrots, corn)
  • 2 large eggs, lightly beaten
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon plant-based oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon white pepper
  • 2 green onions, thinly sliced (for garnish)
  • Optional: Sriracha or chili garlic sauce to taste

Instructions

  1. In a large skillet over medium heat, cook diced chicken until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, sauté chopped onion in remaining oil until translucent.
  3. Add minced garlic and ground ginger; cook until fragrant.
  4. Stir in mixed vegetables and cook until heated through.
  5. Push veggies to one side; scramble the beaten eggs on the other side until just set.
  6. Combine everything in the skillet, then add the cooled rice.
  7. Pour soy sauce and optional oyster sauce over the mixture; stir to combine evenly.
  8. Drizzle with sesame oil and sprinkle white pepper; stir-fry for another few minutes to heat thoroughly.
  9. Return cooked chicken; mix well before serving hot with green onions on top.
