  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup shelled edamame
  • 1/4 cup sesame seeds
  • 1 package (3 oz) ramen noodles (crushed)
  • Dressing: vegetable oil, rice vinegar, honey, soy sauce, sesame oil, ground ginger

  1. Pat chicken breasts dry; slice horizontally if thick.
  2. Season chicken with garlic powder, onion powder, paprika, salt, and pepper.
  3. Heat olive oil in a skillet over medium-high heat; cook seasoned chicken for about 5–7 minutes per side until golden brown.
  4. Let chicken rest for 5–10 minutes before slicing or shredding.
  5. In a large bowl, combine shredded lettuce, red cabbage, carrots, edamame, green onions, toasted almonds, mandarin oranges, and crushed ramen noodles.
  6. For the dressing, whisk together vegetable oil, rice vinegar, honey, soy sauce, ramen seasoning packet, sesame oil, ground ginger, garlic powder.
  7. Toss salad ingredients with dressing just before serving.
