  • 200g digestive or graham crackers
  • 50g melted butter
  • 600g full-fat cream cheese
  • 200g granulated sugar
  • 150g sour cream
  • 1 tablespoon cornstarch
  • 150g diced apples
  • 1 tablespoon granulated sugar (for apples)
  • Spices: cinnamon and nutmeg
  • Streusel topping: 100g flour, 80g dark brown sugar, 70g butter

  1. Preheat oven to 350°F (175°C). Prepare a springform pan with aluminum foil.
  2. Crush the digestive or graham crackers and mix with melted butter; press into the bottom of the pan. Bake for 8-10 minutes and cool.
  3. Beat room temperature cream cheese until creamy; gradually add granulated sugar, then sour cream and cornstarch until just combined.
  4. Combine diced apples with granulated sugar and spices in a separate bowl.
  5. For the streusel, combine flour, dark brown sugar, and cinnamon; mix in cold butter until crumbly.
  6. Pour cheesecake filling over crust, bake in a water bath for about 50 minutes.
  7. Add apple mixture and streusel on top; lower oven to 325°F (160°C) and bake for an additional 30-40 minutes until golden brown.
  8. Cool in the oven with door ajar for an hour before chilling in the fridge for at least six hours.
