  • 200g digestive or graham crackers
  • 50g melted butter
  • 600g full-fat cream cheese (room temperature)
  • 200g granulated sugar
  • 150g sour cream (room temperature)
  • 1 tablespoon cornstarch
  • 150g diced apples
  • 100g all-purpose flour
  • 80g dark brown sugar
  • 70g butter (room temperature)
  • Spices: ground cinnamon and nutmeg

  1. Preheat oven to 350°F (175°C). Wrap a springform pan with aluminum foil.
  2. Crush digestive crackers and mix with melted butter; press into the bottom of the pan and bake for 8–10 minutes until golden. Cool completely.
  3. Beat cream cheese until smooth; add sugar, sour cream, and cornstarch, mixing until combined.
  4. Toss diced apples with sugar and spices, then fold into the cheesecake mixture.
  5. For the crumble, mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
  6. Pour cheesecake filling over crust, add apple mixture, top with crumble, and bake for about 50 minutes in a water bath.
  7. Reduce heat to 325°F (160°C) and continue baking for another 30–40 minutes until set but jiggly in the center.
  8. Cool gradually in the oven before chilling overnight.
